The shredded zucchini is low carb and adds moisture to the low carb meatloaf recipe, helping to keep meatloaf from drying out.
You don't have to add the zucchini, but we like to hide low carb veggies in our meals.

- Preheat oven.
- In a large mixing bowl, blend all ingredients.
- Press the low carb meatloaf mixture into a loaf pan, or 8×8 square pan.
- If desired, brush the top with sugar-free ketchup half way through baking.
- Bake 1 hour.
- Let cool for ten minutes. Serve hot.
- Store leftovers in an airtight container in the refrigerator.
